Contacts, companies, and custom fields. This is the bulk of the record count and the easy part.
Moves with real work
Deals and opportunities along with their values, owners, and stage history. Ownership is where migrations quietly lose data, because every platform stores it differently. Pipelines get rebuilt by hand, because an imported deal has to land somewhere and that somewhere has to exist first.
Does not move at all
Email history. It exports to a searchable archive your team can keep, but it does not import into the new platform as threaded history. Anyone who implies otherwise has not done one. Plan for the archive, not the transfer.
Gets rebuilt
Automations, workflows, and platform-specific reporting. That is usually the point rather than a defect, because those automations were built for the process you are replacing.
Stays human
Deciding what your stages should be. Deciding who owns what. Deciding which of the last five years of data is worth keeping. No tool decides that for you, and we would not want it to.

Your team runs it. Documented so it survives the next departure rather than living in one person's head.
